{Monday's Menu November 9th-13th}



I think I finally figured this whole thing out this time.  lol  So here's our plan for this week.  Like I've said before....I have a list of meals that I use during the week and I pick one in the morning that's going to work for that day since our schedule changes so often.  So many times I'll plan something and then it just doesn't end up working because something comes up!  lol

{Taquitos}

The other night I decided to try and make taquitos by myself....I used to buy them in the store, but it just got too expensive....The Mr can eat a whole BIG box of those things to himself.  Well this is another of those mexican type meals that our kids don't REALLY like, but I've noticed as they are getting older that they are trying more and more....especially like Mr E....he eats these now, and Mr A ate a couple of them....so not too bad.  lol
I love the site http://www.allrecipies.com/ when I'm looking for new things for make for dinner.  So I looked on there but there was only one recipie for taquitos, and it was for chicken and The Mr likes beef ones.  lol  So go figure I just kinda winged it.  lol  I made a beef mixture....ground beef with a little minced onion, little taco seasoning, cumin, and some salsa.....made sure it was all tiny since I was putting it into the small corn tortillas.  Then I heated the corn tortillas in the micro for 15 secs just for they wouldn't break when I rolled them....so I took my small scoop and pput two scoops of meat onto the tortilla, rolled it up, held it together with two kabob sticks (cuz that's what I had onhand lol) and stuck them into some hot vegtable oil to fry.  The kabob sticks actually worked out nicely because they are long and it was easy to handle them with the hot oil, and then I turned them around to cook all sides....removed them and let them drain on some papertowels.  I also made some refried beans, some rice (my fake mexican rice with salsa) and a salad on the side.  It was really nice.  The Mr's and my plate looked like it came from a mexican resturant!  :-D  I only took on bite of one of the taquitos because of my stomach....it was really good, but I didn't want to push it.  :-D

{Monday's Menu Nov 2nd-8th}


I'm not going to assign a day to any of the meals because that's not actually how I do my meal planning.....I set up meals for the week, and I make sure I have on hand what I need to make these meals, and then each morning I pick which meal would work best for us or simply which one sounds good lol that morning.
So here goes for this week!  :-D

{White Chili}

White Chili
  • 3-4 Chicken Breasts
  • 1 cup Chicken Broth
  • 2 Cans of Cream of Mushroom Soup
  • 2 Cans White Navy Beans (don't drain)
  • 2 Cans Corn ( don't drain)
  • 1 Pound Velveeta Cheese (cubed)
  • 1 Can Rio-Tel Diced Tomatoes w/green chilies (don't drain)
  • 1 Medium Onion, chopped

Boil chicken breasts until done (45 min). Reserve 1 cup of the chicken broth. Shred chicken and add broth to a 5-quart crock pot. Add all other ingredients to the crock pot (it will fill the pot) and cook on high for about 3-4 hours. Stir when needed.

*I really tend to use leftover chicken for this meal....or even leftover pork (like a pork roast).....if not, I would pouch the chicken which is just a fancy word for boiling it with seasonings lol.....like salt & pepper to start nothing fancy if ya don't want to and I usually use canned chicken broth lol to boil the chicken in lol and put that in with the chili.  I also drain all the canned things in the recipe....I like a thicker chili.....so this is something that you just have to know about yourself and play with.  :-D

* I wanted to make an edit to our menu plan.  We were completely blessed yesterday.  I'm getting teary eyed just thinking about this as I'm typing.  My friend called me yesterday.....and not that we haven't talked or anything.....we just haven't been able to make our schedules work lately.....you know how life gets sometimes......so she calls me kinda out of the blue.....and asks me if we could use some ground beef!!!  I said "You have NO idea!" So she comes over with THREE groceries bags FULL of all sorts of different meats!  I couldn't believe how blessed we were!!!  It really was such a blessing in such a stressful time!
Thank you Lord, and Thank you Tiffannie!!!  :-D 
So we will be able to make a few changes to our menu planning!  Not quite so much chicken....not that we don't like chicken!  lol  :-D

{Monday's Menu October 19th-30th}

Yay! Two weeks in a row! lol :-D
It's going to be a rough couple of weeks for us. So I'm making these next two weeks meals from things that we already have on hand and in our pantry. It will be a stretch this time, but I'm sure I can do it. So, I'm going to put up my meal ideas that I have for the next two weeks.

If we like them I'll share them. lol There's some recipes that I've been wanting to share that I have misplaced.....So as soon as I find those I'll get them on here. :-D

{Hamburger/Chicken Stroganoff}

1/2 cup minced onion
1 clove garlic minced
1/4 cup butter
1 lb ground beef
2 Tbsp flour
1 tsp salt
1/4 tsp pepper
1 8oz can sliced muchrooms with liquid
1 1ooz can cream of mushroom soup diluted with 1 can of water
1 cup sour cream
2 Tbsp minced parsley
1 12oz package egg noodles


Saute onion and garlic in butter over medium heat. Stir mear and brown. Add flour, salt, pepper, and mushrooms. Cook 5 mins. Combine diluted soup with sour cream. Stir meat and simmer 10 mins. Serve over hot drained noodles. Enjoy!

*I changed this the last time I made it. I used chicken breast in bite size pieces. I also used fresh mushrooms. AND not only was I able to enjoy it this time with my family....my family still enjoyed it!!! :-D It was GREAT! :-D I also served it with rice this time. :-)

{Monday's Menu for August 17th}

Okay! Here goes!!! I have been wanting to do menu planning for quiet some time. This is something that I used to be really good at....but somewhere between deployments and moving it's been difficult to pick up again this time. So I can't get back in the groove if I don't even start.....So this is my start. :-) I am planning on getting this blog a little organized and then I will start linking to some other blogs and joining in on all the fun. :-) So here's a tentitive plan for our family dinners this week. :-)

PS-I am also going to try to incorporate a leftover night....this is sometimes difficult for us to do since my hubby takes leftovers to work for his 'lunch'....and that is still a great way to utilize our leftovers, so I'm okay with that. :-)

{Valentine's Day Breakfast}

Potted Red Tulips.....This is what The Mr brought home Saturday....He worked this weekend, so it was nice when he walked in the door with flowers. :-D He told me that he got the potted ones so that I can keep them....but I truely don't have any where near a green thumb....so fingers crossed & we'll see. lol I am a lucky woman! :-D


I like to make pancakes for breakfast, especially on the weekends. I totally cheat and use pancake mix....but they are completely made with love. :-) I have these metal heart shapes with handles on them-I honestly don't know what they are actually for....but I thought it would be way cute to make heart shaped pancakes with them for Valentine's Day breakfast....I also used them to make heart shaped eggs for The Mr's breakfast. :-) They took a little longer, cuz I could only make two at a time lol but definately worth it. :-)



{AppleSauce}

I also made homemade applesauce! :-) It is really yummy & really easy to make! :-) I have LOTS of memories around my Oma's homemade applesauce. :-)

{SplitPea Soup}


For Christmas Eve dinner, my mom made a ham....yummy....so I asked her if I could have the ham bone when she was done with it. :-) I LOVE homemade splitpea soup!!! :-) This is a picture while it was still cooking (cuz I was able to get the camera on for a few mins lol) It was SOOOO yummy!!! ALL of us enjoyed it! The Mr and I like it so I knew that wasn't a problem....but you know how it is with kids....one min they like something the next they don't, ;-) So imagine my suprize when ALL of our kids ate some for dinner. :-) Not too bad if I say so myself :-)

I am going to be joining the Menu Plan Monday over at organize junkie (need to input link) I am trying to figure out how to link them together. bear with me. lol
